Yellowtail sashimi with yuzu soy espuma and smoky nasu

Avocado and king crab roll with yuzu kosho mayo, olive oil and yuzu juice

Chilled somen noodles with shiitake soup, wasabi, ginger and crunchies

Langoustine tempura with spicy shiso ponzu

Foie Gras ‘Martini’ with umushu jelly, nashi and puffed rice

Roasted scallop with yuzu truffle egg sauce
