Mauro Colagreco’s Mirazur, Menton, “Menu Dégustation” lunch

Menu from a tasting lunch at Mauro Colagreco’s two Michelin starred, and 24th in the 2012 World’s 50 Best Restaurants list, gastronomic restaurant Mirazur in Menton, France (see the London experience here(rough English translations bold and in brackets):

[Sharing bread, lemon and ginger olive oil]

Huître au concombre (oysters and cucumber)

 Carpaccio de dorade rose – pêche et fleurs de bégonia (carpaccio of sea bream – fish and flowers of Begonia)

Fraîcheur de tomates (freshness of tomatoes)

Ragoût de courgettes et bulots, consommé aux légumes grillés (stew of courgettes and whelks, grilled vegetable consommé)

– risotto de quinoa, champignons de saison et crème parmesan (<The Forest> – quinoa risotto, seasonal mushrooms, parmesan cream)

Pagre – jus d’oignons (snapper – onion jus)

Canard rôti, sauce aux prunes et émulsion à la lavande (roast duck, plum sauce and lavender emulsion)

Ananas, gelée shiso et espuma reine des prés (pineapple, shiso jelly, meadowsweet foam)

Canelloni de coriandre, sorbet et gelée de pommes (coriander canelloni, apple sorbet and jelly)
