River sea bass, water cress veloute, champagne mouselline, cockles, green peas, mustard seeds, thyme sauce, fondant potatoes, caramelised baby shallot

Beef from Limousin, cream of fermented black garlic, caramelised spring onion, cream of carrot, lavender artichokes

Belgian raspberry, tonka vanilla bean ice cream, orange and cinnamon creme brulee and grapefruit sage flowers
